Sharon’s Frittata

I called it Sharon’s Frittata because we can’t remember the name of the recipe. Rainbow slice or something stupid. Anyway, very yummy and dead easy.

2/3 Cup grated tasty cheese
1/3 Cup grated Parmesan
5 eggs, lightly beaten
1/2 Cup finely sliced then chopped ham
5 spring onions, finely chopped
3 Cups finely grated vegetables
e.g. Carrots, Zucchini, Sweet Potato, Kohl Rabi
1/2 Cup Milk
1/4 teaspoon Paprika, Smoky flavour if you have some
Salt and Pepper to taste

Combine everything in a bowl. Pour into a greased square cake tin or something similar

Cook for 180C for 35 minutes

When coolish, slice into fingers and serve
