This soup is dead easy and cheap. Ooh. Sounds like me.
2 Leeks, finely sliced
1 medium Brown Onion, finely chopped
1 Tablespoon Olive Oil
4 Desiree Potatoes, chopped
1 & 1/2 litres Chicken Stock (or water with 6 stock cubes)
1 Garlic clove, finely chopped
Fry the onion in the olive oil until soft, add everything else and simmer for 2 hours.
Garnish with finely chopped crispy bacon and/or chives.
